COONAWARRA CABERNET SAUVIGNON

THIS CABERNET SAUVIGNON IS AN EXCELLENT EXAMPLE OF THE GOLD LABEL ETHOS - WHICH AIMS TO COMBINE THE RIGHT VARIETY WITH THE RIGHT REGION. COONAWARRA AND CABERNET SAUVIGNON ARE SYNONYMOUS WITH EACH OTHER, DISPLAYING VARIETAL AND REGIONAL INFLUENCE.

Coonawarra's Terra Rossa soil and maritime influenced cool climate is the perfect combination for Cabernet Sauvignon. Each individual block was harvested and fermented separately in small rotary fermenters. The gentle ferments went for 6 to 8 days with occasional aerative pumpovers. After pressing off the skins, the wines were racked into new and seasoned French and American oak to complete malolatic fermentation, before being racked several times and returned to oak.

ADELAIDE HILLS CHARDONNAY

ABV 13%

THE HIGH ALTITUDE AND COOL CLIMATE OF ADELAIDE HILLS MAKES IT AN IDEAL LOCATION FOR CHARDONNAY, WHERE IT DEVELOPS ELEGANT FRUIT FLAVOURS WHILE RETAINING CLEANSING NATURAL ACIDITY.

The Wolf Blass Gold Label Adelaide Hills Chardonnay is an excellent example of the variety and region. Fruit from each vineyard is fermented in small batches with a combination of wild and cultured yeasts. The majority of the wine is barrel fermented in French oak. A portion of the wine underwent malolactic fermentation and lees stirring to add richness, complexity and mouthfeel.
